Recipe 18: Guinness Oatmeal Bread

I love to make bread albeit, NOT without my bread machine. I don’t know how women did it back in the day. I remember my Grandmother making bread at home up to her armpits in flour, loaves rising on top of the refrigerator. She would bake them in bulk 5 or 6 at a time then freeze them in the big freezer chest we had in the dark scary coldroom in the basement.  I am more of the throw it in all together and let the machine do the work method. I don’t bake my bread in the machine but, it makes and excellent mixer and proofing device. Once the dough phase is done I remove it to a proper loaf pan or a large baking tray and allow it to rise. Then pop it into the oven and bake it off. I’m all about quick, convenient and tasty and if you are having people over for a get together they will think you are a genius baking fresh bread. This recipe is a tried and true favorite with a taste of Ireland built in using Guinness and oatmeal together.

Guinness is a popular Irish dry stout that originated in the brewery of Arthur Guinness (1725–1803) at St. James Gate, Dublin. Guinness is directly descended from the porter style that originated in London in the early 18th century and is one of the most successful beer brands worldwide. It is known for it’s distinctive burnt flavour which is derived from the use of roasted unmalted barley.

Prep Time: 1 hour, 50 minutes
Cook Time: 30 minutes
Total Time: 2 hour, 20 minutes

Ingredients

2 1/2 cups unbleached white bread flour
1/2 cup whole wheat bread flour
1 cup quick-cooking oatmeal
1 1/2 tsp Salt
1/2 cups room-temperature Guinness
3 tbs molasses
2 tsp olive oil
1/2 cup water
2 1/2 tsp bread machine yeast

Directions

Add water, salt, Guinness, molasses, olive oil into bread machine container then add flour, oatmeal and yeast. Set bread maker to dough setting and allow setting to complete.
Remove dough from bread machine and place into a large loaf pan or onto a large baking sheet forming a oblong ball. Allow to rise covered with tea towel until doubled in size.
Preheat oven to 400 F and bake for 30 minutes or until top is golden brown and bread sounds hollow when tapped. Remove and cool or serve warm with butter or your favorite preserves.

Yield: 6 to 8 servings

FOOTNOTE: Get to work people. Making bread is simple. Invest in a bread making machine and make fresh, healthy breads of your choice instead of those spongy filled with preservative choices at your local grocer.
